This sparkling mocktail is the kind of drink that looks like it came from a trendy brunch spot but comes together in your own kitchen with just a handful of real ingredients. A quick homemade berry syrup — made by simmering mixed berries with raw honey, lemon juice, and a splash of water — gives the whole thing a deep, jewel-toned color and a naturally sweet-tart flavor that store-bought mixers simply can't match. Once strained smooth and poured over ice, it meets chilled kombucha for a fizzy, probiotic-rich lift that feels genuinely refreshing. The gentle stir at the end keeps those bubbles alive, so every sip has that satisfying effervescence. A few fresh mint leaves on top make it look stunning without any extra effort. It's the perfect thing to serve at a gathering when you want something beautiful and alcohol-free that absolutely everyone at the table can enjoy.

Combine the berries, honey, lemon juice, and water in a small saucepan over medium heat. Cook, stirring and pressing the berries with the back of a spoon, until the berries have broken down and the mixture is syrupy, about 4–5 minutes.
Pour the berry mixture through a fine-mesh strainer set over a small bowl, pressing firmly on the solids to extract as much liquid as possible. Discard the solids. Let the berry syrup cool to room temperature, about 5 minutes.
