Bright, tangy, and beautifully fizzy, this berry mocktail is the kind of drink that looks like it came from a trendy café but comes together in your own kitchen in minutes. The heart of it is a quick homemade berry syrup — strawberries, blueberries, raspberries, or blackberries cooked down with raw honey and fresh lemon juice until thick and jewel-toned. Straining out the solids gives you a silky, intensely flavored base that pairs perfectly with the natural effervescence of chilled plain kombucha. Many store-bought flavored kombuchas and sparkling drinks sneak in grain-derived ingredients, so making your own mocktail with a clean, unflavored kombucha is a smart and satisfying workaround. Poured over ice and finished with a few fresh mint leaves, it's stunning enough to serve at a dinner party but easy enough to whip up on a Tuesday afternoon. The gentle stir at the end keeps those bubbles alive so every sip is as lively as the first.

Combine the berries, honey, lemon juice, and water in a small saucepan over medium heat. Cook, stirring and pressing the berries with the back of a spoon, until the berries have broken down and the mixture is syrupy, about 4–5 minutes.
Pour the berry mixture through a fine-mesh strainer set over a small bowl, pressing firmly on the solids to extract as much liquid as possible. Discard the solids. Let the berry syrup cool to room temperature, about 5 minutes.
