This vibrant mocktail is everything you want in a warm-weather drink — tart, lightly sweet, fizzy, and gorgeous in the glass. A quick homemade berry syrup made from fresh or frozen berries, raw honey, and lemon juice does all the heavy lifting, giving you that deep jewel-toned color and bold fruit flavor in just minutes on the stovetop. Poured over ice and topped with chilled kombucha, the result is bubbly and refreshing without any alcohol or artificial anything. Nut-free drinks can be surprisingly tricky to find at cafés and juice bars where almond milk and almond syrups sneak into nearly everything, so making your own at home is a genuinely satisfying move. The gentle stir at the end keeps those kombucha bubbles alive, so every sip has that satisfying effervescence. A few fresh mint leaves on top make it look like something you'd pay twelve dollars for at a trendy brunch spot.

Combine the berries, honey, lemon juice, and water in a small saucepan over medium heat. Cook, stirring and pressing the berries with the back of a spoon, until the berries have broken down and the mixture is syrupy, about 4–5 minutes.
Pour the berry mixture through a fine-mesh strainer set over a small bowl, pressing firmly on the solids to extract as much liquid as possible. Discard the solids. Let the berry syrup cool to room temperature, about 5 minutes.
