Beet kvass is one of those ancient fermented tonics that feels almost magical once you understand how simple it actually is to make. Raw beets, sea salt, apple cider vinegar, fresh ginger, and filtered water come together in a jar and do most of the work on their own over a couple of days at room temperature. The result is a deeply ruby-colored, pleasantly tart drink with an earthy depth that's genuinely unlike anything you'll find on a store shelf. Because every single ingredient here is whole and unprocessed, this tonic fits cleanly into a Whole30 approach without any label-reading stress or substitutions required. The ginger adds a gentle warmth that plays beautifully against the natural sweetness of the beets, and the optional thyme brings a subtle herbal note that makes it feel almost fancy. Served chilled in small glasses, it's the kind of thing you'll want to keep a jar of in the fridge at all times — both for the flavor and for how good it makes you feel.

Place the cubed beets into a clean 1-quart wide-mouth glass jar. Add the sea salt, apple cider vinegar, and grated ginger. Tuck in the thyme sprigs, if using.
Pour the filtered water over the beets, leaving at least 1 inch of headspace at the top of the jar. The beets should be fully submerged; press them down gently if any float above the waterline.
