Deep ruby and alive with earthy tang, this fermented beet tonic is one of those old-world drinks that earns its place in a modern kitchen fast. Raw beets, sea salt, apple cider vinegar, and fresh ginger come together in a simple jar ferment that does most of the work on your countertop over a couple of days. The result is a pleasantly tart, mineral-rich sip that tastes complex without requiring any complicated technique. Many store-bought wellness tonics and fermented drinks sneak in spice blends or colorings that can include yellow-hued additives, so making your own from scratch is the cleanest way to know exactly what's in your glass. Every ingredient here is straightforward and naturally free of the warm golden spice that shows up uninvited in so many health-focused products. The optional thyme adds a subtle herbal note that makes the finished kvass feel almost sophisticated served chilled in a small glass. Once you see that liquid deepen to a rich jewel tone and catch that first bright, tangy aroma, you'll understand why this tradition has lasted centuries.

Place the cubed beets into a clean 1-quart wide-mouth glass jar. Add the sea salt, apple cider vinegar, and grated ginger. Tuck in the thyme sprigs, if using.
Pour the filtered water over the beets, leaving at least 1 inch of headspace at the top of the jar. The beets should be fully submerged; press them down gently if any float above the waterline.
