Deep ruby and alive with earthy tang, this fermented beet tonic is one of those ancient remedies that feels surprisingly at home in a modern kitchen. Raw beets, sea salt, apple cider vinegar, and fresh ginger come together in a simple jar ferment that does most of its work on the counter while you go about your day. The ginger adds a gentle warmth that cuts through the earthiness of the beets, and optional thyme brings a faintly herbal note that makes the finished tonic feel almost sophisticated. Because every ingredient here is a whole, unprocessed food, there is zero guesswork about hidden additives or shared-facility concerns — just clean, straightforward fermentation. After two to three days at room temperature, the liquid transforms into a beautifully tart, jewel-toned drink that you strain, chill, and sip in small glasses. It is the kind of thing that looks impressive on a table but costs almost nothing to make, and once you have a jar in the fridge you will find yourself reaching for it constantly.

Place the cubed beets into a clean 1-quart wide-mouth glass jar. Add the sea salt, apple cider vinegar, and grated ginger. Tuck in the thyme sprigs, if using.
Pour the filtered water over the beets, leaving at least 1 inch of headspace at the top of the jar. The beets should be fully submerged; press them down gently if any float above the waterline.
