This fermented beet tonic is one of those drinks that looks almost too beautiful to sip — a deep, jewel-toned ruby that practically glows in the glass. It's earthy, lightly tangy, and gently warming from the fresh ginger, with a complexity that feels far more sophisticated than its short ingredient list suggests. Because it's built entirely from beets, salt, apple cider vinegar, ginger, water, and a couple of optional thyme sprigs, there's nothing here to trigger a red meat allergy — no hidden broths, no meat-derived additives, no cross-contamination concerns from processed foods. The fermentation process does the heavy lifting, slowly transforming plain filtered water into something probiotic-rich and genuinely craveable over two to three days on your countertop. Patience is really the only skill required: pack the jar, wait for that satisfying tartness to develop, then strain and chill. Serve it in small glasses as a digestive tonic before meals or just as a grounding, gut-friendly alternative to the usual drinks. Once you see how easy it is to make at home, store-bought options — with their long ingredient panels — will feel completely unnecessary.

Place the cubed beets into a clean 1-quart wide-mouth glass jar. Add the sea salt, apple cider vinegar, and grated ginger. Tuck in the thyme sprigs, if using.
Pour the filtered water over the beets, leaving at least 1 inch of headspace at the top of the jar. The beets should be fully submerged; press them down gently if any float above the waterline.
