Deep ruby and quietly alive, this fermented beet tonic is one of those old-world drinks that earns its place in a modern kitchen fast. Raw beets, sea salt, apple cider vinegar, and fresh ginger come together in a jar and do most of the work on their own over a couple of days at room temperature — no special equipment, no complicated steps. The result is a pleasantly tart, earthy sip with a color so vivid it almost looks like something you'd order at a fancy wellness bar. Because it's built entirely from whole vegetables, salt, and water, there's zero concern about hidden nut ingredients or shared-facility contamination that can make packaged drinks a gamble. Optional thyme adds a subtle herbal note that makes the finished tonic feel a little more refined without complicating anything. Served chilled in small glasses, it's the kind of thing that surprises people — in the best way — the first time they try it.

Place the cubed beets into a clean 1-quart wide-mouth glass jar. Add the sea salt, apple cider vinegar, and grated ginger. Tuck in the thyme sprigs, if using.
Pour the filtered water over the beets, leaving at least 1 inch of headspace at the top of the jar. The beets should be fully submerged; press them down gently if any float above the waterline.
