This fermented beet tonic is one of those ancient remedies that tastes far more interesting than it sounds — earthy, tangy, and a gorgeous deep ruby that looks almost too pretty to drink. It's a naturally plant-based drink built entirely from whole, simple ingredients: raw beets, sea salt, apple cider vinegar, fresh ginger, and a little filtered water. The ginger adds a gentle warmth that plays beautifully against the beets' natural sweetness as the fermentation slowly coaxes out a pleasantly tart, complex flavor. Because everything here is fermented at home in a glass jar, you have complete control over what goes in — no mystery additives, no preservatives, no labels to decode. The process is wonderfully low-effort: cube, combine, wait, and strain. At the 48-hour mark you can taste it and decide whether you want it a touch more tart, which makes the whole thing feel satisfyingly hands-on without being demanding. Serve it cold in small glasses as a morning tonic or a palate-cleanser between courses — it's the kind of thing that quietly becomes a ritual.

Place the cubed beets into a clean 1-quart wide-mouth glass jar. Add the sea salt, apple cider vinegar, and grated ginger. Tuck in the thyme sprigs, if using.
Pour the filtered water over the beets, leaving at least 1 inch of headspace at the top of the jar. The beets should be fully submerged; press them down gently if any float above the waterline.
