Beet kvass is one of those ancient fermented tonics that feels almost magical — raw beets, salt, a splash of apple cider vinegar, and a little patience transform into a deeply ruby, tangy drink that's as beautiful as it is good for you. The grated ginger adds a gentle warmth, and the optional thyme brings a subtle herbal note that makes the whole thing feel intentional and a little fancy. This is a naturally fermented recipe, which means no special equipment, no heat, and no complicated steps — just a clean jar, filtered water, and a couple of days on the counter. Tree nut concerns are completely off the table here since every ingredient is a whole food: beets, salt, vinegar, ginger, water, and fresh herbs. The fermentation process does the heavy lifting, slowly coaxing out that signature tartness and turning the liquid into a gorgeous, jewel-toned tonic. Serve it chilled in small glasses and it feels like something you'd find at a boutique wellness café — except you made it yourself for almost nothing.

Place the cubed beets into a clean 1-quart wide-mouth glass jar. Add the sea salt, apple cider vinegar, and grated ginger. Tuck in the thyme sprigs, if using.
Pour the filtered water over the beets, leaving at least 1 inch of headspace at the top of the jar. The beets should be fully submerged; press them down gently if any float above the waterline.
