Beet kvass is one of those ancient fermented tonics that deserves a serious comeback, and this version is as approachable as it gets. Raw beets, sea salt, apple cider vinegar, and fresh ginger come together in a jar and do most of the work on their own over a couple of days, transforming into a deeply ruby, tangy drink with an earthy kick. The ginger adds a gentle warmth that plays beautifully against the natural sweetness of the beets, while the optional thyme brings a subtle herbal note that makes it feel almost medicinal in the best way. Because every ingredient here is whole and straightforward, there are no hidden additives or shared-facility concerns to stress over — just real food doing its thing. The fermentation process is low-effort and forgiving; you're essentially just watching a jar sit on your counter and deepen in color until it smells pleasantly tart and ready. Serve it chilled in small glasses as a morning tonic, a digestive after dinner, or an earthy mixer for something more creative. Once you see how easy it is to make at home, store-bought probiotic drinks will feel a lot less necessary.

Place the cubed beets into a clean 1-quart wide-mouth glass jar. Add the sea salt, apple cider vinegar, and grated ginger. Tuck in the thyme sprigs, if using.
Pour the filtered water over the beets, leaving at least 1 inch of headspace at the top of the jar. The beets should be fully submerged; press them down gently if any float above the waterline.
