This fermented beet tonic is one of those ancient remedies that feels surprisingly modern once you taste it — deeply earthy, gently tangy, and a vivid ruby red that looks almost too pretty to drink. It's made with just a handful of whole, recognizable ingredients: raw beets, sea salt, apple cider vinegar, fresh ginger, and filtered water, with optional thyme for a subtle herbal note. No preservatives, no synthetic additives, no mystery stabilizers — just real food doing what real food does when you give it a little time. That simplicity is exactly what makes it a smart choice when you're avoiding the kinds of chemical preservatives that sneak into so many bottled drinks and wellness tonics on store shelves. The process is beautifully low-effort: cube the beets, combine everything in a jar, and let fermentation work its magic over two to three days at room temperature. You'll know it's ready when the liquid turns that deep jewel-toned color and smells pleasantly tart. Serve it chilled in small glasses and enjoy it as a bracing, gut-friendly sip you made entirely from scratch.

Place the cubed beets into a clean 1-quart wide-mouth glass jar. Add the sea salt, apple cider vinegar, and grated ginger. Tuck in the thyme sprigs, if using.
Pour the filtered water over the beets, leaving at least 1 inch of headspace at the top of the jar. The beets should be fully submerged; press them down gently if any float above the waterline.
