Deep ruby and alive with earthy tang, this fermented beet tonic is one of those drinks that looks dramatic but comes together with almost no effort. Raw beets, sea salt, apple cider vinegar, and fresh ginger do all the heavy lifting — no cooking, no special equipment, just a clean jar and a little patience. The ginger adds a bright, warming bite that plays beautifully against the natural sweetness of the beets as they ferment over two to three days. Many spiced tonics and digestive drinks lean heavily on warming spices that can be tricky to avoid, but this one gets all its depth from ginger, thyme, and the slow magic of lacto-fermentation. You end up with something that tastes complex and intentional without a single ingredient you'd need to second-guess. Serve it chilled in small glasses — it's the kind of thing that makes you feel genuinely good after you drink it.

Place the cubed beets into a clean 1-quart wide-mouth glass jar. Add the sea salt, apple cider vinegar, and grated ginger. Tuck in the thyme sprigs, if using.
Pour the filtered water over the beets, leaving at least 1 inch of headspace at the top of the jar. The beets should be fully submerged; press them down gently if any float above the waterline.
