Deep ruby and alive with earthy tang, this fermented beet tonic is one of those drinks that looks dramatic but comes together with almost no effort. Raw beets, sea salt, apple cider vinegar, fresh ginger, and filtered water do all the heavy lifting — no curing agents, no preservatives, nothing processed. That matters a lot when you're avoiding nitrates and nitrites, since many store-bought beet juices and pickled products sneak in additives you'd rather skip. Here, the gentle two-to-three-day countertop ferment is entirely natural, relying on salt and time to coax out that pleasantly tart, mineral-rich flavor. The optional thyme sprigs add a subtle herbal note that makes the finished tonic feel almost sophisticated. Served chilled in small glasses, it's a bracing little ritual — earthy, slightly sour, and genuinely good for sipping on its own or alongside a meal. Once you see how simple it is to make a clean, additive-free version at home, it's hard to go back to anything bottled.

Place the cubed beets into a clean 1-quart wide-mouth glass jar. Add the sea salt, apple cider vinegar, and grated ginger. Tuck in the thyme sprigs, if using.
Pour the filtered water over the beets, leaving at least 1 inch of headspace at the top of the jar. The beets should be fully submerged; press them down gently if any float above the waterline.
