Beet kvass is one of those ancient fermented tonics that feels almost magical — raw beets, salt, a splash of apple cider vinegar, and a little time are all it takes to produce a deeply ruby, tangy drink with serious gut-friendly credentials. The grated ginger adds a gentle warmth that plays beautifully against the earthy sweetness of the beets, and the optional thyme brings a faintly herbal note that makes the whole thing feel a little more special. Because this recipe relies entirely on whole vegetables, water, and a handful of pantry staples, it's naturally free of legumes in every sense — no hidden flours, no bean-based additives, nothing to second-guess. The fermentation process is wonderfully low-effort: you pack the jar, leave it on the counter for a couple of days, and let the ingredients do their thing. That slow transformation at room temperature is what deepens the color and builds the pleasantly tart flavor that makes kvass so distinctive. Serve it chilled in small glasses as a digestive tonic before meals or simply as a refreshing, probiotic-rich alternative to anything out of a bottle. Once you see how easy it is to make at home, it's hard to go back to store-bought options.

Place the cubed beets into a clean 1-quart wide-mouth glass jar. Add the sea salt, apple cider vinegar, and grated ginger. Tuck in the thyme sprigs, if using.
Pour the filtered water over the beets, leaving at least 1 inch of headspace at the top of the jar. The beets should be fully submerged; press them down gently if any float above the waterline.
