Beet kvass is one of those ancient fermented tonics that feels almost magical once you see that deep ruby liquid develop right on your countertop. Raw beets, sea salt, apple cider vinegar, and fresh ginger are all it takes to kick off a gentle, natural fermentation that transforms plain filtered water into something earthy, tangy, and genuinely good for you. The ginger adds a subtle warmth that plays beautifully against the beets' natural sweetness, and the optional thyme brings a faint herbal note that makes the whole thing feel a little more special. Because every single ingredient here is plant-based and dairy-free, there is absolutely nothing to second-guess — no hidden milk solids, no cream-based shortcuts, just whole foods doing their thing. The hardest part is honestly just waiting the two to three days while the liquid deepens in color and develops that pleasantly tart aroma. Once it is strained and chilled, you have a vibrant, probiotic-forward tonic that is as beautiful in the glass as it is satisfying to sip. Pour it into small glasses and enjoy it cold — it is the kind of thing that makes you feel like you really have your wellness routine figured out.

Place the cubed beets into a clean 1-quart wide-mouth glass jar. Add the sea salt, apple cider vinegar, and grated ginger. Tuck in the thyme sprigs, if using.
Pour the filtered water over the beets, leaving at least 1 inch of headspace at the top of the jar. The beets should be fully submerged; press them down gently if any float above the waterline.
