This fermented beet tonic is one of those ancient remedies that feels surprisingly modern once you taste it — earthy, tangy, and a gorgeous deep ruby red that looks almost too pretty to drink. Many commercial tonics and wellness drinks sneak in sweeteners to balance out bold flavors, but this one relies entirely on the natural earthiness of raw beets, the brightness of apple cider vinegar, and a little warmth from fresh ginger. No sweetener needed, and nothing artificial in sight. The two-to-three-day countertop ferment does all the heavy lifting, slowly transforming plain filtered water into something complex and alive. A couple of sprigs of fresh thyme add a subtle herbal note that makes the whole thing feel a little more special without complicating the process. It's a genuinely simple project — just beets, salt, a jar, and a little patience — and the payoff is a chilled, probiotic-rich sip you can feel good about pouring every single day.

Place the cubed beets into a clean 1-quart wide-mouth glass jar. Add the sea salt, apple cider vinegar, and grated ginger. Tuck in the thyme sprigs, if using.
Pour the filtered water over the beets, leaving at least 1 inch of headspace at the top of the jar. The beets should be fully submerged; press them down gently if any float above the waterline.
