Beet kvass is one of those ancient fermented tonics that deserves a serious comeback, and this version is as simple and satisfying as it gets. Raw beets, sea salt, apple cider vinegar, and fresh ginger come together in a jar and do most of the work on their own over a couple of days, developing a deeply earthy, tangy flavor that's genuinely addictive. The ruby-red liquid that results is stunning — the kind of thing you want to pour into a small glass and sip slowly. Because it's made entirely from whole, naturally gluten-free ingredients with zero grains or additives involved, there's no need to scrutinize labels or worry about hidden sources of gluten sneaking in. The ginger adds a gentle warmth that plays beautifully against the beets' natural sweetness, and the optional thyme gives it a subtle herbal note that feels almost medicinal in the best way. It's a great gut-friendly ritual to build into your week, especially if you're looking for something beyond the usual kombucha options. Serve it cold in small pours and let the color alone do the convincing.

Place the cubed beets into a clean 1-quart wide-mouth glass jar. Add the sea salt, apple cider vinegar, and grated ginger. Tuck in the thyme sprigs, if using.
Pour the filtered water over the beets, leaving at least 1 inch of headspace at the top of the jar. The beets should be fully submerged; press them down gently if any float above the waterline.
