Deep ruby and alive with earthy, tangy flavor, this fermented beet tonic is one of those ancient remedies that earns its place in a modern kitchen. It comes together with just a handful of clean, whole ingredients — raw beets, sea salt, apple cider vinegar, fresh ginger, and a little filtered water — so there is absolutely nothing hidden or questionable in the mix. Many store-bought fermented drinks and wellness tonics rely on gelatin-based capsules, clarifying agents, or additives to achieve their texture and shelf life, but this one ferments naturally on your counter over two to three days, no shortcuts needed. The ginger adds a gentle warmth that plays beautifully against the beets' natural sweetness, and the optional thyme sprigs give it a subtle herbal note that feels almost sophisticated. Watching the water deepen into that gorgeous, jewel-toned crimson over the fermentation window is genuinely satisfying, and tasting it at the 48-hour mark to check for that perfect tartness makes you feel like a real home fermentation pro. Served chilled in small glasses, it is bracing, refreshing, and surprisingly easy to sip on a regular basis.

Place the cubed beets into a clean 1-quart wide-mouth glass jar. Add the sea salt, apple cider vinegar, and grated ginger. Tuck in the thyme sprigs, if using.
Pour the filtered water over the beets, leaving at least 1 inch of headspace at the top of the jar. The beets should be fully submerged; press them down gently if any float above the waterline.
