Earthy, tangy, and strikingly beautiful in the glass, this fermented beet tonic is one of those old-world remedies that genuinely earns its reputation. Raw beets, sea salt, apple cider vinegar, and fresh ginger come together in a simple room-temperature ferment that transforms filtered water into a deeply ruby, pleasantly tart drink over just a couple of days. Because the only sweetness here comes from the beets themselves — and fermentation naturally breaks down much of that — this tonic sits comfortably within a low-fructose approach without any substitutions or workarounds needed. The ginger adds a gentle warmth, and the optional thyme brings a subtle herbal note that makes the whole thing feel a little more sophisticated than your average wellness drink. It takes almost no hands-on effort: pack a jar, wait, strain, and refrigerate. Served chilled in small glasses, it's a bracing, gut-friendly sip that feels like a ritual rather than a chore.

Place the cubed beets into a clean 1-quart wide-mouth glass jar. Add the sea salt, apple cider vinegar, and grated ginger. Tuck in the thyme sprigs, if using.
Pour the filtered water over the beets, leaving at least 1 inch of headspace at the top of the jar. The beets should be fully submerged; press them down gently if any float above the waterline.
