This fermented tonic is one of those ancient, almost magical drinks that turns a handful of humble ingredients into something deeply nourishing and complex. Raw beets, sea salt, apple cider vinegar, and fresh ginger come together in a jar of filtered water and slowly transform over two to three days into a ruby-red elixir with a pleasantly earthy, tangy bite. The fermentation process is beautifully low-effort — no cooking, no special equipment, just a clean jar, a loose cover, and a little patience. Optional thyme sprigs add a subtle herbal note that makes the finished tonic feel almost medicinal in the best possible way. Because every ingredient here is entirely plant-based and whole, there's zero concern about hidden seafood derivatives or fish-based additives that can sneak into store-bought fermented drinks and broths. Serve it chilled in small glasses as a gut-friendly sipper before meals, or enjoy it as a bold, savory alternative to kombucha.

Place the cubed beets into a clean 1-quart wide-mouth glass jar. Add the sea salt, apple cider vinegar, and grated ginger. Tuck in the thyme sprigs, if using.
Pour the filtered water over the beets, leaving at least 1 inch of headspace at the top of the jar. The beets should be fully submerged; press them down gently if any float above the waterline.
