Beet kvass is one of those ancient fermented tonics that deserves a serious comeback, and this version is as clean and straightforward as it gets. Deep ruby-colored and pleasantly tart, it has an earthy, slightly tangy flavor that wakes up your palate in the best way — think of it as nature's version of a wellness shot, but actually enjoyable to sip. Because it's made with nothing but raw beets, sea salt, apple cider vinegar, fresh ginger, filtered water, and optional thyme, there are zero additives, stabilizers, or emulsifying agents to worry about — just real fermentation doing its thing. Many store-bought fermented drinks and health tonics sneak in lecithin, polysorbates, or other emulsifiers to extend shelf life or improve texture, so making your own is genuinely the safest route. The ginger adds a gentle warmth that plays beautifully against the beets' natural sweetness, and the thyme brings a subtle herbal note that makes the whole thing feel a little more refined. After a couple of days at room temperature, the liquid transforms into something complex and alive, ready to be strained and chilled. Serve it in small glasses and enjoy knowing exactly what went into every sip.

Place the cubed beets into a clean 1-quart wide-mouth glass jar. Add the sea salt, apple cider vinegar, and grated ginger. Tuck in the thyme sprigs, if using.
Pour the filtered water over the beets, leaving at least 1 inch of headspace at the top of the jar. The beets should be fully submerged; press them down gently if any float above the waterline.
