Beet kvass is one of those ancient fermented tonics that feels almost magical — raw beets, salt, a splash of apple cider vinegar, and a little time are all it takes to produce a deeply ruby, tangy drink with serious gut-friendly credentials. The ginger adds a gentle warmth that plays beautifully against the earthy sweetness of the beets, and the optional thyme brings a faintly herbal note that makes the whole thing feel a little more special. Every ingredient here is naturally plant-based, so there's no need to swap or substitute a thing — this tonic is completely free of dairy by nature, not by compromise. The fermentation process is wonderfully low-effort: pack a jar, pour in filtered water, and let it sit at room temperature for a couple of days while the liquid transforms into something complex and alive. That deep color alone is enough to make you want to pour it into a pretty glass and feel like you're doing something genuinely good for yourself. Serve it chilled in small portions — it's bold and tangy, not something you'll want to chug, but something you'll find yourself reaching for again and again.

Place the cubed beets into a clean 1-quart wide-mouth glass jar. Add the sea salt, apple cider vinegar, and grated ginger. Tuck in the thyme sprigs, if using.
Pour the filtered water over the beets, leaving at least 1 inch of headspace at the top of the jar. The beets should be fully submerged; press them down gently if any float above the waterline.
