Beet kvass is one of those ancient fermented tonics that feels almost magical — raw beets, salt, a splash of apple cider vinegar, and a little ginger transform over a couple of days into a deeply ruby, tangy drink with serious gut-friendly credentials. The process is beautifully low-tech: no special equipment, no heat, just a glass jar and a little patience while the natural fermentation does its work. Ginger adds a gentle warmth that plays off the earthy sweetness of the beets, and the optional thyme brings a faintly herbal note that makes the whole thing feel a little more refined. Many store-bought fermented drinks sneak in coconut water or coconut-derived ingredients as a base or sweetener, so making your own from scratch means you know exactly what's in the jar. The finished kvass is strained clean, chilled, and served in small glasses — it's tart and savory in the best way, more of a sipping tonic than a juice. It keeps in the fridge for up to a week, so you can come back to it daily as a bracing little ritual.

Place the cubed beets into a clean 1-quart wide-mouth glass jar. Add the sea salt, apple cider vinegar, and grated ginger. Tuck in the thyme sprigs, if using.
Pour the filtered water over the beets, leaving at least 1 inch of headspace at the top of the jar. The beets should be fully submerged; press them down gently if any float above the waterline.
