Deep ruby and alive with earthy, tangy flavor, this fermented beet tonic is one of those drinks that looks dramatic but comes together with almost no effort. Raw beets, sea salt, apple cider vinegar, and fresh ginger are all it takes to kick off a gentle countertop fermentation that transforms plain filtered water into something genuinely complex. The ginger adds a subtle warmth, the thyme brings a faint herbal note, and after just two to three days the liquid develops that signature mildly sour depth that makes kvass so satisfying to sip. Because the recipe relies entirely on whole vegetables, salt, and a splash of vinegar, there is nothing here to worry about on the citrus front — no lemon juice, no orange zest, no hidden citric acid hiding in a packaged ingredient. Many fermented tonics and gut-health drinks lean heavily on citrus to brighten the flavor, but the natural acidity that builds during fermentation does that work here all on its own. Serve it cold in small glasses straight from the fridge, and you have a striking, probiotic-rich drink that feels like a treat without any of the usual label-reading stress.

Place the cubed beets into a clean 1-quart wide-mouth glass jar. Add the sea salt, apple cider vinegar, and grated ginger. Tuck in the thyme sprigs, if using.
Pour the filtered water over the beets, leaving at least 1 inch of headspace at the top of the jar. The beets should be fully submerged; press them down gently if any float above the waterline.
