Deep ruby and alive with earthy, tangy flavor, this fermented beet tonic is one of those old-world drinks that feels almost magical once you understand how simple it really is. Raw beets, sea salt, apple cider vinegar, fresh ginger, and a little filtered water are all it takes to coax something genuinely complex out of your kitchen counter over a couple of days. The ginger adds a gentle warmth that plays beautifully against the natural sweetness of the beets, and the optional thyme brings a faintly herbal note that makes the whole thing feel a bit more special. Because this is a naturally fermented, whole-food recipe built entirely from produce and pantry staples, there is zero concern about hidden nut derivatives or cross-contact from processed ingredients. Fermented tonics like this can sometimes feel intimidating, but the process here is forgiving — you just watch the liquid deepen to that gorgeous jewel tone and give it a taste at the 48-hour mark. Serve it cold in small glasses as a digestive tonic, a savory morning ritual, or a conversation-starting pour alongside a meal.

Place the cubed beets into a clean 1-quart wide-mouth glass jar. Add the sea salt, apple cider vinegar, and grated ginger. Tuck in the thyme sprigs, if using.
Pour the filtered water over the beets, leaving at least 1 inch of headspace at the top of the jar. The beets should be fully submerged; press them down gently if any float above the waterline.
