Earthy, tangy, and a vivid shade of deep ruby, this fermented beet tonic is one of those drinks that looks as striking as it tastes. It's made entirely from whole, recognizable ingredients — raw beets, sea salt, apple cider vinegar, fresh ginger, filtered water, and a couple of thyme sprigs — so there's zero guesswork about what you're actually drinking. That matters a lot when you're trying to avoid the synthetic flavor compounds that sneak into so many bottled wellness drinks and store-bought tonics. The fermentation happens naturally over two to three days at room temperature, letting the beets develop a pleasantly tart, mineral-rich depth without any shortcuts or additives. Fresh ginger adds a gentle warmth that plays beautifully against the earthiness of the beets, and the apple cider vinegar gives the whole thing a bright, clean edge. Serve it chilled in small glasses and it feels almost ceremonial — the kind of thing you sip slowly and actually feel good about.

Place the cubed beets into a clean 1-quart wide-mouth glass jar. Add the sea salt, apple cider vinegar, and grated ginger. Tuck in the thyme sprigs, if using.
Pour the filtered water over the beets, leaving at least 1 inch of headspace at the top of the jar. The beets should be fully submerged; press them down gently if any float above the waterline.
