That vivid magenta color alone is enough to stop a party in its tracks, and the flavor absolutely delivers on the promise. Roasting the beet before blending it into the hummus deepens its natural sweetness and gives the whole spread a rich, earthy complexity that canned or store-bought versions simply can't match. Chickpeas, tahini, fresh lemon juice, garlic, and a touch of cumin round everything out into something that tastes bright, nutty, and satisfying all at once. Keeping things paraben-free is genuinely easy here because every single ingredient is whole and recognizable — no preservatives, no additives, nothing hiding in a label. Crisp English cucumber rounds make the perfect vehicle: cool and refreshing against the warm, savory hummus, and naturally sturdy enough to hold a generous spoonful without bending. A drizzle of good olive oil and a pinch of flaky sea salt at the end elevate the whole platter from snack to something you'd proudly set out for guests. These come together with minimal fuss and look absolutely stunning on a board.

Preheat the oven to 400°F (205°C). Place the beet on a sheet of aluminum foil, drizzle with a little olive oil, and wrap tightly. Set on a baking sheet and roast for 35–40 minutes, until a knife slides through the center with no resistance.
Remove the beet from the oven and let it rest, still wrapped, for 10 minutes. Unwrap and, using a paper towel, rub the skin off under cool running water. Cut the beet into rough chunks.
