That vivid magenta hummus gets its color entirely from a real roasted beet — no dyes, no cured meats, no processed shortcuts that sneak in unwanted preservatives. Every ingredient here is whole and straightforward: chickpeas, tahini, lemon juice, garlic, olive oil, and warm spices, all blitzed together into something silky and deeply savory. Roasting the beet low and slow in foil coaxes out its natural sweetness and makes the skin slip right off, so the flavor is earthy and rich without any bitterness. Spooned onto cool, crisp cucumber rounds, the hummus gets a refreshing contrast that makes these little bites genuinely hard to stop eating. They're elegant enough for a party platter but simple enough to throw together on a weeknight when you want a snack that actually feels nourishing. A drizzle of good olive oil and a pinch of flaky salt at the end ties everything together beautifully.

Preheat the oven to 400°F (205°C). Place the beet on a sheet of aluminum foil, drizzle with a little olive oil, and wrap tightly. Set on a baking sheet and roast for 35–40 minutes, until a knife slides through the center with no resistance.
Remove the beet from the oven and let it rest, still wrapped, for 10 minutes. Unwrap and, using a paper towel, rub the skin off under cool running water. Cut the beet into rough chunks.
