These vibrant little bites are as stunning to look at as they are to eat — the deep magenta hummus against cool, crisp cucumber makes for a snack that genuinely stops people in their tracks. A whole roasted beet is the star here, blended with chickpeas, tahini, lemon juice, and a touch of cumin into a silky, earthy spread that tastes far more complex than the ingredient list suggests. Because everything is made from scratch in a food processor, you have complete control over what goes in — no store-bought dips with ambiguous "natural flavors" or shared-facility warnings to navigate. The cucumber rounds do double duty as both vessel and refreshing contrast, keeping things light and naturally gluten-free without any extra effort. A drizzle of good olive oil and a pinch of flaky sea salt at the end pull the whole platter together with a little extra polish. These are ideal for entertaining, easy snacking, or anytime you want something that looks impressive without requiring much fuss at all.

Preheat the oven to 400°F (205°C). Place the beet on a sheet of aluminum foil, drizzle with a little olive oil, and wrap tightly. Set on a baking sheet and roast for 35–40 minutes, until a knife slides through the center with no resistance.
Remove the beet from the oven and let it rest, still wrapped, for 10 minutes. Unwrap and, using a paper towel, rub the skin off under cool running water. Cut the beet into rough chunks.
