Roasted beet gives this vibrant hummus its deep magenta color and a subtle earthy sweetness that makes it genuinely hard to stop eating. Chickpeas, tahini, fresh lemon juice, and a touch of cumin round out the flavor into something creamy, bright, and satisfying — all blended together in a food processor until silky smooth. Spooned onto crisp English cucumber rounds, it becomes a two-bite snack that feels fancy but comes together with minimal effort. Every single ingredient here pulls its weight from an anti-inflammatory standpoint — extra virgin olive oil, garlic, beets, and legumes are all staples of an eating pattern built around reducing inflammation naturally. There's no processed base or mystery ingredient to second-guess, just whole foods doing exactly what they're supposed to do. A drizzle of olive oil and a pinch of flaky sea salt at the end elevate the whole platter without adding anything you'd want to avoid. Whether you're serving these at a gathering or prepping a snack for yourself, they disappear fast.

Preheat the oven to 400°F (205°C). Place the beet on a sheet of aluminum foil, drizzle with a little olive oil, and wrap tightly. Set on a baking sheet and roast for 35–40 minutes, until a knife slides through the center with no resistance.
Remove the beet from the oven and let it rest, still wrapped, for 10 minutes. Unwrap and, using a paper towel, rub the skin off under cool running water. Cut the beet into rough chunks.
