That vivid magenta hummus gets its color entirely from a single roasted beet — no dyes, no sweeteners, nothing added to punch it up artificially. The beet roasts low and slow until it's completely tender, then blends with chickpeas, tahini, lemon juice, garlic, and cumin into something silky, earthy, and genuinely stunning on a platter. Every ingredient here is whole and straightforward, which makes this a smart choice when you're keeping a close eye on added sugars hiding in store-bought dips and spreads. Spooned onto cool, crisp cucumber rounds, the hummus gets a refreshing contrast that makes these little bites feel like something you'd find at a fancy appetizer spread. A drizzle of good olive oil and a pinch of flaky sea salt at the end pull everything together without needing a drop of anything sweet. They come together faster than you'd expect once the beet is roasted, and they disappear from the platter even faster.

Preheat the oven to 400°F (205°C). Place the beet on a sheet of aluminum foil, drizzle with a little olive oil, and wrap tightly. Set on a baking sheet and roast for 35–40 minutes, until a knife slides through the center with no resistance.
Remove the beet from the oven and let it rest, still wrapped, for 10 minutes. Unwrap and, using a paper towel, rub the skin off under cool running water. Cut the beet into rough chunks.
