Savory, fresh, and packed with bold flavor, this lettuce bowl is the kind of weeknight dinner that feels way more exciting than the effort it requires. Ground beef gets cooked down with zucchini, carrot, ginger, and garlic until everything is fragrant and golden, then tossed in a glossy sauce built on coconut aminos and apple cider vinegar — no soy, no sweetened blends, just clean, punchy flavor. Coconut aminos is the real hero here, delivering that deep umami hit that makes Asian-inspired dishes so satisfying, without the hidden additives that can sneak into conventional sauces. The cumin and red pepper flakes add warmth and a little kick, keeping the flavor profile interesting without leaning on any spice blends that might contain unwanted ingredients. Crisp butter lettuce cups make the perfect vessel — light and cool against the warm, savory filling — and a scatter of fresh cilantro and scallion greens ties everything together beautifully. It's naturally low-carb, endlessly customizable, and comes together in one skillet, which means less cleanup and more time enjoying dinner.
