Combine the tamari, maple syrup, rice vinegar, grated ginger, sesame oil, cornstarch, and red pepper flakes (if using) in a small bowl and whisk until the cornstarch is fully dissolved. Set aside.
Combine the jasmine rice and water in a medium saucepan and bring to a boil over high heat. Reduce the heat to low, cover, and cook until the water is absorbed and the rice is tender, about 15 minutes. Remove from heat and let stand, covered, for 5 minutes, then fluff with a fork.
