Rich, deeply savory, and built entirely from whole ingredients, this bone broth is the kind of thing that makes your kitchen smell incredible for hours. Roasting the bones first at high heat develops a dark, caramelized depth that you simply cannot get from a carton on the grocery store shelf — and most store-bought options sneak in flavor enhancers or other additives you'd rather avoid. Here, every bit of flavor comes from knuckles, marrow bones, and oxtail simmered low and slow alongside carrots, celery, onion, garlic, fresh herbs, ginger, and turmeric. The apple cider vinegar isn't just a pantry trick — it actively helps pull minerals and collagen from the bones over that long, gentle simmer, which is why a properly made batch will turn into a firm, jiggly gel once chilled. That gel is your sign that the broth is genuinely nourishing and collagen-rich, not watery or thin. Freeze it in one- or two-cup portions and you'll always have a clean, wholesome base ready for soups, braises, or just sipping straight from a mug on a cold afternoon.

Preheat the oven to 425°F (220°C). Arrange the beef bones in a single layer on a large rimmed baking sheet or roasting pan. Roast for 25–30 minutes, turning once halfway through, until the bones are deeply browned on the cut surfaces.
Transfer the roasted bones to a large stockpot (12-quart or larger). Pour off and discard any rendered fat from the roasting pan, then add 1–2 cups of the cold water to the hot pan and scrape up the browned bits with a wooden spoon. Pour this liquid into the stockpot.
