Hearty, colorful, and deeply satisfying, this bowl delivers everything you want from a weeknight dinner without a single ingredient that works against your wellness goals. Cauliflower pulsed into fluffy rice-like grains forms the base, soaking up all the savory juices from the spiced beef and vegetables piled on top. Ground beef gets browned until rich and caramelized, then tossed with diced red bell pepper, zucchini, and baby spinach — a lineup of non-starchy vegetables that keeps things clean and nourishing. Coconut aminos stand in for soy sauce, delivering that umami depth without the sugar or fermented grain concerns that make so many sauces off-limits, and a splash of apple cider vinegar brightens the whole pan. Cumin and smoked paprika do the heavy lifting on flavor, so you never feel like you're eating a restricted version of something — this just tastes like good food. Optional avocado slices add a creamy finish that makes each bowl feel genuinely complete. It serves four, comes together in one skillet, and is the kind of meal you'll want on repeat.

Coconut aminos is a common stand-in for soy sauce on a candida diet. It does carry a little sugar from coconut sap, but this recipe uses only about 2 1/4 teaspoons per serving, which is likely fine.

Working in batches, pulse the cauliflower florets in a food processor (or grate on the large holes of a box grater) until the pieces resemble coarse rice grains, about 8–10 one-second pulses per batch. You should have about 4 cups of cauliflower rice.
Heat 1 tbsp olive oil in a large (12-inch) skillet over medium-high heat until shimmering. Add the cauliflower rice, season with ¼ tsp salt, and cook, stirring occasionally, until the cauliflower is just tender and any excess moisture has evaporated, about 5–6 minutes. Transfer to a bowl and cover loosely to keep warm; wipe out the skillet.
