Hearty, warming, and packed with real flavor, this skillet dish brings together caramelized butternut squash, savory ground beef, and fragrant spices in a way that feels both satisfying and genuinely nourishing. Managing fructose intake often means scanning every label and second-guessing sauces, condiments, and sneaky sweeteners — but every ingredient here is straightforward and naturally low in free fructose. The butternut squash gets golden and tender in coconut oil before reuniting with the beef, and that small splash of apple cider vinegar at the end ties everything together with a subtle brightness rather than any sweetness. Turmeric and ginger give the whole pan a warm, earthy depth that makes this taste far more complex than the ingredient list suggests. Fresh thyme and parsley scattered over the top at the finish keep things lively, and the optional baby spinach adds a pop of color and extra greens without disrupting the balance. It's a one-skillet meal that comes together with minimal fuss and even less cleanup, which is always a win on a weeknight.

Heat 1 tbsp of the coconut oil in a 12-inch skillet over medium-high heat until shimmering. Add the butternut squash cubes in a single layer and cook undisturbed for 4 minutes, until the undersides are golden brown. Stir and continue cooking for another 4–5 minutes, until the squash is tender when pierced with a fork and caramelized on most sides. Transfer to a plate and set aside.
Reduce the heat to medium and add the remaining 1 tbsp coconut oil to the same skillet. Add the onion and cook, stirring occasionally, for 5–6 minutes, until softened and translucent.
