Hash is one of those dishes that often sneaks eggs into the mix, but this version skips them entirely without sacrificing any of the hearty, satisfying energy you want from a one-pan meal. Caramelized butternut squash brings a natural sweetness that plays beautifully against savory ground beef, warm turmeric, and a bright hit of apple cider vinegar that ties everything together. Coconut oil gives the squash those gorgeous golden edges, while the onion and garlic build a deeply fragrant base that makes the whole kitchen smell incredible. The turmeric and ginger add just enough warmth to make this feel special without veering into complicated territory. A handful of baby spinach stirred in at the end adds color and a little extra nutrition if you want it, though the hash stands on its own without it. Fresh parsley and thyme scattered over the top at the finish keep things lively and herbaceous. It's the kind of weeknight dinner that looks and tastes like you put in way more effort than you actually did.

Heat 1 tbsp of the coconut oil in a 12-inch skillet over medium-high heat until shimmering. Add the butternut squash cubes in a single layer and cook undisturbed for 4 minutes, until the undersides are golden brown. Stir and continue cooking for another 4–5 minutes, until the squash is tender when pierced with a fork and caramelized on most sides. Transfer to a plate and set aside.
Reduce the heat to medium and add the remaining 1 tbsp coconut oil to the same skillet. Add the onion and cook, stirring occasionally, for 5–6 minutes, until softened and translucent.
