Chef's tip
Use the same weight and cut the chicken to match the recipe. Cook it to 165°F (74°C). For a long braise, slow-cooker recipe, or pressure-cooker recipe, shorten the cooking time because chicken thighs tenderize faster than steak.
1 tbsp soy sauce
1 tbsp cornstarch
1 tsp baking soda

For the sauce

⅓ cup oyster sauce
2 tbsp soy sauce
1 tbsp shaoxing wine
1 tbsp brown sugar
1 tsp sesame oil
1 tsp cornstarch
½ cup low-sodium beef broth
Chef's tip
The flavor will be a little lighter - use the same amount.

For the stir-fry

1 lb broccoli, cut into bite-sized florets
2 tbsp neutral oil, divided (such as vegetable oil or canola oil)
3 cloves garlic, minced
1 tbsp fresh ginger, minced
¼ cup water

For serving

cooked white rice, for serving
1 tsp sesame seeds (optional)
2 scallions, thinly sliced (optional)

Instructions

1
In a medium bowl, combine the sliced flank steak with 1 tbsp soy sauce, 1 tbsp cornstarch, and 1 tsp baking soda. Toss until every piece is evenly coated, then let the beef rest at room temperature for 15 minutes.
2
While the beef rests, whisk together the oyster sauce, 2 tbsp soy sauce, Shaoxing wine, brown sugar, sesame oil, 1 tsp cornstarch, and beef broth in a small bowl until smooth. Set aside.
