Fresh, vibrant, and packed with garden flavor, this spiralized zucchini salad is the kind of dish that looks impressive but comes together with surprisingly little effort. The pesto is made entirely from scratch — fresh basil, parsley, garlic, lemon, and extra-virgin olive oil blended into a silky, bright green sauce that puts any jarred version to shame. That matters a lot when you're avoiding synthetic preservatives like BHA and BHT, which sneak into many store-bought pestos and salad dressings without much fanfare on the label. Every ingredient here is whole and recognizable, so you know exactly what you're eating. Salting the zucchini noodles first and squeezing out the excess moisture is the key step that keeps this salad from turning watery, giving you noodles that actually hold onto all that gorgeous pesto. Kalamata olives and crisp English cucumber round out the bowl with briny, cool contrast that makes each bite feel balanced and satisfying. It's the kind of no-fuss, feel-good salad you'll want to make on repeat all summer long.

Spiralize the zucchini into long noodles using a spiralizer, or cut into thin ribbons with a julienne peeler. Place the noodles in a colander set over the sink, toss with 1/2 tsp of the sea salt, and let stand for 10 minutes until the zucchini releases some of its moisture.
While the zucchini drains, combine the basil leaves, parsley, garlic, lemon juice, lemon zest, and 1/4 tsp sea salt in a food processor or blender. Pulse 6–8 times until the herbs are roughly chopped.
