Fresh basil gets pulsed with garlic, lemon juice, and olive oil into a vibrant, bright green pesto that flavors these turkey patties from the inside out. Ground turkey is seasoned with warm turmeric and ginger, worked in gently so the patties stay tender, then seared in a hot skillet until deeply golden on each side. Instead of a bun, crisp butter lettuce leaves cradle each juicy patty, topped with a generous spoonful of that same basil pesto and thin slices of cucumber and red onion for crunch. It's a satisfying, whole-food dinner built entirely from real ingredients — no grains, no fillers, just herby, well-seasoned turkey and fresh produce. The lettuce wrap format keeps things light and handheld while still feeling like a full meal, and it's a genuinely great option to add to your Paleo rotation.

Make the pesto: combine the basil leaves, garlic, lemon juice, and salt in a food processor. Pulse 8–10 times until the basil is roughly chopped. With the motor running, drizzle in the 1/4 cup olive oil and process until the pesto is smooth and bright green, about 30 seconds. Scrape into a bowl and set aside.
In a large mixing bowl, combine the ground turkey, 3 tablespoons of the prepared pesto, salt, turmeric, and ginger. Mix gently with your hands until just combined — do not overwork the meat. Divide into 4 equal portions and shape each into a patty about 3/4 inch thick, pressing a shallow dimple into the center of each with your thumb.
