Preheat the oven to 425°F (220°C). Line a large baking sheet with parchment paper.
In a food processor, combine the basil leaves, pine nuts, Parmesan, lemon juice, salt, and black pepper. Pulse 6–8 times until coarsely chopped. With the processor running, drizzle in the 3 tbsp garlic-infused olive oil and process until the pesto is smooth but still has some texture, about 20–30 seconds. Scrape down the sides as needed.
