Shaved fennel and juicy orange segments are already a classic pairing, but a vibrant homemade basil pesto takes this salad somewhere truly special. The pesto comes together in a food processor with fresh basil, garlic, turmeric, a splash of apple cider vinegar, and a tablespoon of freshly squeezed orange juice — no pine nuts, no parmesan, just clean, bold flavor built from real ingredients. Tigernut flour gives the pesto a subtle body and richness that makes it cling beautifully to those paper-thin fennel slices without weighing the whole dish down. Everything here is naturally free of caffeine, so there's no need to scrutinize labels or swap anything out — it's just fresh produce and pantry staples doing exactly what they should. The result is a salad that's glossy, herby, and bright, with a citrus note running through every bite. Torn mint and reserved fennel fronds scattered over the top add a finishing freshness that makes it feel genuinely restaurant-worthy. Serve it immediately so the fennel stays crisp and the pesto stays that gorgeous, vivid green.

Trim the fennel bulbs, removing the stalks and any tough outer layers. Using a mandoline or a sharp knife, shave the fennel crosswise into very thin slices, about 1/8 inch thick. Place in a large mixing bowl and set aside.
Cut the tops and bottoms off both oranges, then stand each orange upright and slice away the peel and white pith following the curve of the fruit. Working over a small bowl to catch the juice, cut between the membranes to release the segments. Squeeze the spent membranes to extract any remaining juice; reserve 1 tbsp of this juice for the pesto.
