Cool, bright, and impossibly elegant, these cucumber gazpacho shooters are the kind of appetizer that stops a party in its tracks. Blended smooth and strained until silky, the gazpacho base gets its refreshing edge from fresh lemon juice, apple cider vinegar, and a whisper of ground ginger — no cooking required. The real showstopper is the basil pesto swirl dragged across the surface of each glass, turning a simple shooter into something that looks genuinely restaurant-worthy. Lupin flour and lupin-derived ingredients have been quietly sneaking into all kinds of packaged foods and restaurant dishes, so having a recipe built entirely from whole, recognizable produce and pantry staples is a genuine relief. Every single ingredient here — cucumber, basil, olive oil, garlic, shallot, lemon — is naturally free of that legume, with zero workarounds needed. The technique is straightforward: blend, strain, chill, and swirl. Serve them at your next gathering and watch the glasses disappear before you've even had a chance to explain what's in them.
