Cool, bright, and impossibly elegant, these cucumber gazpacho shooters are the kind of appetizer that stops a party in its tracks. Fresh English cucumbers get blended with lemon juice, shallot, garlic, apple cider vinegar, and a hint of ground ginger, then strained until the result is silky-smooth and deeply refreshing. The whole thing gets topped with a swirl of vibrant basil pesto — made from just basil, olive oil, garlic, and lemon — dragged into a gorgeous pattern with a toothpick right before serving. Every single ingredient here is plant-based and straightforwardly clean, so there's zero concern about hidden seafood derivatives or fish-based flavor boosters that sneak into so many store-bought cold soups and sauces. The no-cook approach means you're relying entirely on fresh produce and good olive oil, which is exactly where the flavor comes from anyway. These are best served ice-cold in shot glasses, making them a stunning passed appetizer or a chic starter for a summer dinner.
