Heat the olive oil in a large 5–6 qt pot over medium heat until shimmering. Add the onion, carrots, celery, and 1/2 tsp salt, and cook, stirring occasionally, until the onion is softened and translucent and the carrots have begun to soften, about 7–8 minutes.
Pour in the 6 cups of water and bring to a boil over high heat. Stir in the rinsed jasmine rice, reduce the heat to medium-low, and simmer, partially covered, until the rice is just tender, about 15 minutes.
