Heat the olive oil in a large (5–6 qt) pot over medium heat until it shimmers. Add the onion and carrots and cook, stirring occasionally, until the onion is softened and translucent, about 6–7 minutes.
Add the rinsed rice and stir to coat in the oil for about 30 seconds. Pour in the chicken broth and add 1 tsp salt. Raise the heat to medium-high and bring to a boil, then reduce to a steady simmer. Cook uncovered until the rice is just tender, about 15 minutes.
