Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper. Toss the potato wedges with 2 tbsp olive oil and 1/2 tsp salt until evenly coated, then spread them in a single layer on the prepared baking sheet, cut side down.
Roast the potatoes for 25–30 minutes, flipping once halfway through, until the cut sides are deep golden and the centers are tender when pierced with a fork.
