This hearty, veggie-packed pasta layers tender French green lentils and creamy white beans into a garlicky, rosemary-scented balsamic sauce that clings to every bite. Ribbons of lacinato kale wilt right into the skillet, turning glossy and bright against the deep, tangy reduction, while a finishing hit of lemon zest and juice keeps the whole dish tasting fresh instead of heavy. Toasted pine nuts or walnuts on top add a satisfying crunch, and a scattering of parsley brings just the right herbal lift. It's the kind of one-pan meal that feels rustic and comforting but still comes together quickly enough for a weeknight. Between the lentils, beans, and greens, there's plenty of texture and substance packed into every forkful, making this a genuinely satisfying, well-rounded dinner for a gluten free table.

Combine the rinsed lentils, 3 cups water, and 1/2 tsp salt in a medium saucepan over medium-high heat. Bring to a boil, then reduce heat to a steady simmer and cook, uncovered, until the lentils are tender but still hold their shape, 20–25 minutes. Drain any excess water and set aside.
While the lentils cook, bring a large pot of well-salted water to a boil. Cook the pasta according to package directions until al dente — tender with a slight resistance at the center. Before draining, ladle out 1/2 cup of the starchy cooking water and set it aside. Drain the pasta in a colander.
