Few desserts hit the way a properly made baklava does — shatteringly crisp layers of buttered phyllo, a fragrant walnut filling spiced with cinnamon and cardamom, and a honey syrup that soaks into every golden crevice. The whole thing is built from straightforward, wholesome ingredients you can inspect and trust, which matters when you're being more intentional about what goes into your body. Walnuts are the star of the filling here, and they bring a satisfying richness alongside healthy fats that make this feel like an indulgence worth having. The honey syrup is made from scratch with real honey, water, sugar, a cinnamon stick, and a squeeze of fresh lemon juice — no mystery additives, no store-bought shortcuts. One of the smartest moves in this recipe is pouring the cooled syrup over the hot baklava straight out of the oven, which creates that iconic crisp-yet-sticky texture without any fuss. Cutting the pastry before it bakes is another technique that makes the whole process feel surprisingly manageable, even if you've never worked with phyllo before. Give it a full rest before serving and you'll be rewarded with clean, gorgeous pieces that look like they came from a bakery.

Make the syrup first so it has time to cool completely before use. Combine the honey, water, sugar, cinnamon stick, and whole cloves in a small saucepan over medium heat, stirring until the sugar dissolves. Bring to a boil, then reduce the heat and simmer for 10 minutes, until slightly thickened. Remove from the heat, stir in the lemon juice, and let the syrup cool to room temperature. Remove and discard the cinnamon stick and cloves.
Pulse the walnut halves in a food processor 8–10 times until coarsely chopped — pieces should be roughly the size of a pea, not a fine powder. Transfer to a bowl and stir in the sugar, ground cinnamon, cardamom, and salt until evenly combined.
